I Made Clouds.




On days where there is just a little too much sunshine, one could use a cloud, or two.

You will need:

3 egg whites
1 cup of fine granulated sugar
1 tsp of the essence of vanilla
1 tsp of white vinegar
1tsp corn flour
4tbsp of boiling water

For garnish:

½ cup of softly whipped cream, or more.
Strawberries or anything brightly colored


Make sure your bowl is clean and dry.

Mix all ingredients except for sugar.

Beat egg whites until frothy.

Add in sugar in several additions.

Beat until you from stiff peaks.

To test, upturn bowl over your head – nothing should fall out.

Preheat oven to 180°C.

Sprinkle tray with corn flour to prevent your cloud from sticking.

Pour your cloud onto baking sheet, and form peaks – these will crisp up and be dangerously moreish.

Bake for 15minutes, then turn oven down to 150°C.

Bake for a further 45 minutes.

Leave to cool inside your oven. Be patient.

Cover with softly whipped cream and blood red strawberries.

Serve immediately and the scorching heat wouldn't be so bad anymore.
